One of my favorite Things to Do in Oaxaca City<\/a> was taking a cooking class at Dos Corazones<\/a>, where Chef Aubrey shared her grandmother\u2019s treasured recipe for Oaxacan Chicken Picadillo. It\u2019s a savory, slightly sweet mix of shredded chicken, tomatoes, raisins, and spices that we used to stuff inside chile rellenos. But, it’s also used to fill tacos dorados, quesadillas, or as a main dish. I could\u2019ve definitely eaten it straight from the pan and been happy! <\/p>\n\n\n\n

  • 1<\/span> head of garlic<\/span> finely chopped<\/em><\/span><\/li>
  • \u00bc<\/strong><\/span> Bunch Parsley<\/span> finely chopped<\/em><\/span><\/li>
  • \u00bd<\/span> Cup<\/span> raisins<\/span> chopped<\/em><\/span><\/li>
  • \u00bd<\/span> Cup<\/span> almonds<\/span> <\/em><\/span><\/li>
  • 1<\/span> Tbsp<\/span> Sugar<\/span> <\/em><\/span><\/li>
  • Salt<\/span> <\/em><\/span><\/li>
  • Oil or Butter <\/span> as needed<\/em><\/span><\/li><\/ul><\/div><\/div>\n

    Instructions<\/h3>
    • In a saucepan, heat the oil or butter, add the onion until it is translucent.<\/span><\/div><\/li>
    • Add the garlic and tomato. Saute until the tomato releases its juices, then add the shredded chicken breast, parsley, and almonds.<\/span><\/div><\/li>
    • Cook with medium flame until the tomato juice color changes, then add chopped raisins.<\/span><\/div><\/li>
    • Season with sugar, this is the secret of the picadillo, add salt and never forget the pinch of love.<\/span><\/div><\/li>
    • Cook until all the juices has dried.<\/span><\/div><\/li><\/ul><\/div><\/div>\n
